Where Do Sesame Seeds Come From?

Sesame seeds are a staple food in many cultures throughout the world. It is a versatile ingredient that can be added to both sweet and savory foods. The seeds come from the sesame (Sesamum indicum) plant, which is an annual flowering herb that produces pods filled with edible, nut-like seeds. The plants are cultivated worldwide for their deliciously fragrant and nutty-tasting oil. The seed is also used as a condiment for its distinctive, rich aroma and taste.

There are two main species of sesame plants, and they differ in the appearance of their flowers and the color of their seeds. Pink blossoms indicate the species S. radiatum, which yields lighter seeds, while white flowers are from the traditional S. indica plant and produce darker seeds. Both will flower all summer and continue to produce for months, as they are primarily pollinated by bees and other insects.

Most of the world’s production and export of sesame seeds comes from India, followed by Sudan and China. A significant amount of the seeds are processed to extract the oil. The press cake from this process is used as a food flavoring and in the manufacture of soaps, pharmaceuticals, and lubricants. The hulls are removed by hand or machine and the seeds can be sold unhulled or roasted to intensify their flavor.
