Sams Stuffed Peppers

The sams stuffed peppers offer a high-protein, low-calorie meal with an abundance of vegetables and cheese. The dish is also a good source of fiber, vitamins, and minerals. It is also a relatively healthy option for those on a weight loss diet, since each ground beef stuffed bell pepper only contains 310 calories.

These delicious stuffed peppers are a simple meal to make and can be made ahead of time. Once cooled, they can be stored in the refrigerator for up to four days in a food-safe container. Alternatively, the peppers can be frozen for later use.

Cooking Costco sams stuffed peppers in the oven or air fryer is easy. Preheat the oven to 400 F, and prepare the peppers by cutting them in half lengthwise and removing the core, seeds, and ribs with a paring knife. To air fry, preheat the air fryer to 375 F and mist a metal pan that fits in it with cooking spray.

To prepare the filling, combine beans, corn, rice, and ground turkey with taco seasoning and grated cheese. Mix well, and stuff each half of a bell pepper with the mixture. If desired, add a 1/4 cup of water to the baking dish to help steam the peppers. Sprinkle the tops with additional cheese, and bake for 30 minutes in the preheated oven. The peppers should be a bit browned and tender when they are finished cooking. Serve hot.
